Our overseas talented instructor, Mimi Liew (@passionatecreate & @PassioNate Cakes by LMK) is an extraordinaire cake artist who magically creates architecturally impressive designs, comprising multi-tiered cake creations with intricate and exquisite detailing and more.Other than her great talent in stunning & brilliant Cake Designs and her wealth of experience travelling to many countries to teach pre-Covid, Chef Mimi has an innate interest in baking beautiful Sourdough Artisan Breads.
Mimi will be back to teach in Singapore after 3 years in September 2022 to teach a series & variety of Sourdough Bakes.

**Basic Sourdough Crusty Country Loaf and Focaccia**

All Naturally Leavened Sourdough Focaccia and Crusty Country Loaf without any commercial yeast added.
Sourdough or Wild Yeast breads are breads that had been around since ancient Egypt time when a dough was accidentally left out and microorganisms started to grow and fermentation started. They are similar to fermented food such as kefir, sauerkraut, kimchi etc.

These breads are fermented by a symbiosis combination of wild yeast and lactobacillus cultures (a probiotic, aka bacteria that benefits your gut) hence making these types of long-fermented breads easily digestible.

What you will learn from this Sourdough Basic Series workshop includes:
● How to start fruit yeast water
● How wild yeast starters were made
● Where did they come from
● How to maintain sourdough starter to be passed on to many generations to come
● Hands-on work on different types of hydration dough
● Students will be taught different techniques, tips and methods to bake crusty soft sourdough bread without Dutch Oven
● Students will bring home their own products at the end of the class
● Students also will take home with them their self-started fruit yeast water and starter to kick off their sourdough baking journey.
● All materials, recipe notes, and tools will be provided during the workshop.
● A WhatsApp student support group will be set up to let students discuss and interact with the instructor to raise any queries throughout their Sourdough Baking experience (pertaining to the Sourdough Bakes taught in this workshop) and their sourdough starters maintenance, on an ongoing basis.
