Other than her great talent in stunning & brilliant Cake Designs, Chef Mimi has an innate interest in baking beautiful Sourdough Breads (@passionatecreate).

** Sourdough Longan Red Wine Walnut Boule, Bagels & Pretzels**
Come and learn the secret of how these are made:
.
1) Red Wine Longan Walnut Wild Yeast Boule ( 台式红酒桂圆合桃软欧包)
Longan is a small juicy fruit that grows in clusters that can be air dried or smoked dried. Dried Longans are used in many Chinese cuisines, especially in dessert soups or savoury soup. Its calming and warming properties promote blood circulation especially in women due to the iron content.
In this Red Wine Longan Walnut Sourdough Boule, the dried longans are rehydrated and marinated in Red Wine. In addition to that rustic taste, a combination of chopped walnuts plus the long careful fermentation of the sourdough will enhance the flavour profile of this boule. This Soft European boule (“软欧包“) has a softer and thinner crust and softer bread texture which is more acceptable to the Asians’ palate than the European Crusty Country style loaf.

2) Sourdough New York Bagels (Original Flavour / Matcha & Azuki Beans Flavour)

3) Sourdough Pretzels
.
Learning Outcome for the above recipes:
.
● Students will get hands-on experience from the fermentation of sourdough to shaping the dough.
● Detailed explanations of how to build the profile of two different dough recipes.
● Students will be taught different techniques, tips and methods to bake crusty soft sourdough bread without Dutch Oven
● How to care for the wild yeast / sourdough starter.
● Students will bring home a sourdough starter to continue their wild yeast adventure.
● Each student will also bring home their final baked products – 1 Red Wine Longan Walnuts boule, 5 Bagels & 5 Pretzels, including sampling the bakes in class.
● All materials, recipe notes and tools will be provided during the workshop.
● A WhatsApp student support group will be set up to let students discuss and interact with the instructor to raise any queries throughout their Sourdough Baking experience (pertaining to the Sourdough Bakes taught in this workshop) and their sourdough starters maintenance, on an ongoing basis.

Registration Process

  1. Kindly confirm with Sharon via WhatsApp at +65-9688 2777 if there are still available seats for the workshop before proceeding with the online registration.
  2. Complete the registration online by clicking “Add to Cart”, followed by “View Cart”, then “Proceed to Checkout”. Complete your particulars & add remarks in the section “Order Notes (optional)” eg Workshop Date / Time (if more than 1 option is available), Account Holder Name (if different from the name you register for the class) and your Friend’s name & hp number if you are signing up for others.
  3. Please make Payment via Paynow / Paylah / Bank Transfer etc. with remarks during transfer your Name (if your account holder name is different from the name you registered for the class), Order number & Class Date.
  4. Important Step: Whatsapp Sharon at +6596882777 with a screenshot of payment receipt & Online Order # and advise participant’s mobile number (if you are making payment on behalf of others).
  5. Once payment & payment receipt has been sent, your booking is confirmed and we will reserve a seat(s) for you.
  6. Two days before the workshop, we will send out reminder WhatsApp messages, address, map, directions & a list of things to take note of to all paid participants.
